Beetroot and orange salad with feta and walnuts
INGREDIENTS - Salad:
- 1 large handful of salad leaves
- 1 medium beetroot, precooked and chopped
- 1/2 large orange, peeled and segmented
- 1/8th small red onion, sliced finely
- 50g feta, crumbled
- small handful of roasted walnuts, chopped coarsely
INGREDIENTS - Dressing:
- 1 tbs extra virgin olive oil
- 1 tbs fresh orange juice
- 1 tbs vinegar (white, apple cider, red wine)
- 1/2 tsp wholegrain mustard
- salt and pepper if desired
Combine dressing ingredients in a small jar and shake to combine. Gently combine salad leaves, beetroot, orange, walnuts and onion in a serving dish and sprinkle over feta. Drizzle with dressing and enjoy!
