Super quick fennel, orange and almond salad
INGREDIENTS:
- 2 c mixed salad leaves
- 1 fennel, sliced thinly
- ½ red onion, sliced thinly
- 1 orange. segmented
- ½ c almonds, lightly roasted
Dressing
- 1 Tbsp orange juice
- 2 Tbsp olive oil
- 1 Tbsp white wine vinegar
- Salt and pepper to taste
METHOD:
Combine salad ingredients together in a bowl. Shake dressing ingredients together in a jar, then pour over salad.
