Super quick fennel, orange and almond salad

INGREDIENTS:

  • 2 c mixed salad leaves
  • 1 fennel, sliced thinly
  • ½ red onion, sliced thinly
  • 1 orange. segmented
  • ½ c almonds, lightly roasted

Dressing

  • 1 Tbsp orange juice
  • 2 Tbsp olive oil
  • 1 Tbsp white wine vinegar
  • Salt and pepper to taste

METHOD:

Combine salad ingredients together in a bowl.  Shake dressing ingredients together in a jar, then pour over salad.
