Beetroot and orange salad with feta and walnuts


  • 1 large handful of salad leaves
  • 1 medium beetroot, precooked and chopped
  • 1/2 large orange, peeled and segmented
  • 1/8th small red onion, sliced finely
  • 50g feta, crumbled
  • small handful of roasted walnuts, chopped coarsely


  • 1 tbs extra virgin olive oil
  • 1 tbs fresh orange juice
  • 1 tbs vinegar (white, apple cider, red wine)
  • 1/2 tsp wholegrain mustard
  • salt and pepper if desired

Combine dressing ingredients in a small jar and shake to combine.  Gently combine salad leaves, beetroot, orange, walnuts and onion in a serving dish and sprinkle over feta.  Drizzle with dressing and enjoy!
