Quick falafel wrap

I am often asked for "fake-away" recipes - so here you go!  You can make a yummy take-away style meal in less time than it takes to drive and purchase one, and you know you have fresh, nutritious ingredients. You can make it even faster if you purchase pre-made falafel such as Yumis, but having a packet of dry premix falafel in the pantry makes for a quick and easy meal.  You can of course add whatever salad you like - I think some beetroot chutney is a delicious addition, or do away with the yiros and make a salad with the falafels. 

The fibre in the falafel from the chickpeas will keep your gut bugs happy, as well as help you feel full and satiated.

INGREDIENTS:

  • 1 packet falafel mix (eg Macro brand) - or store bought pre-made falafel
  • wraps or yiros bread
  • parsley, tomato and red onion, chopped finely
  • lettuce
  • extra tomato
  • greek yoghurt/aioli/tzatziki dip

METHOD:

Make falafel according to packet intructions.  For the macro brand it is pour 200ml of boiling water on the dry mix and let sit for 10 minutes.

Shape mix into small balls or patties, then fry for a few minutes each side until browned.

Combine the finely chopped tomato, onion and parsley to make a tabouleh.  Add bulgur wheat if you have it for some extra texture and taste.

Heat the wrap or yiros bread in the frying pan by cooking on each side for 30 seconds.

Top the wrap with lettuce, tabouleh, two falafel patties, extra tomato and a couple of tablespoons of yoghurt, aioli or tzatziki dip (or a mix!).

Eat!
